Cauliflower Fried Rice

When it comes to weight loss, reducing inflammation, and balancing out insulin levels, there may come a time when we are encouraged to go gluten free or possibly even grain free. Now, I'm going to be honest. I am not a huge fan of eating a bunch of grains. Do I believe they are absolutely horrible for you. No. But I do believe that most people eat too much of them and need to learn ways to incorporate less into their daily diets.
Now, before you get mad at me, let me explain. Grains, in general, are hard on our guts to digest. Over time, too much exposure to grains can lead to what we call "leaky gut". In addition, grains effect your insulin levels in ways that aren't necessarily helpful for our blood sugar levels (type 2 diabetes, insulin resistance, hormone imbalances???).
Grains turn into sugar once digested. This sugar, in turn, elevates your insulin levels rather quickly, which gives you quick surges of energy, which is great...until it starts crashing down. This "crash" is called an insulin drop. When your insulin or blood sugar crashes it makes you feel tired, ravenous, anxious, and depressed. It effects your cortisone levels in a way that makes your body feel like it's in panic mode and needs another "hit" of sugar! This is where your afternoon cravings and sleepiness come in. Not to mention, your after dinner sweet tooth!
Often times our family will not incorporate grains into our meals for this reason, essentially to give our bodies a break from the highs and lows of insulin spikes and crashes. This recipe is one that my family loves and don't even notice the rice is missing. Give it a try and let me know what you think!
Fried Rice Ingredients

1 lb nitrate free bacon
1 lb shredded chicken
2 Tbls avocado or olive oil
6 eggs
1 cup chopped carrots
1 cup chopped broccoli
½ cup sweet peas
4 cup cauliflower rice
½ yellow onion
1 clove chopped garlic
2 tsp ginger
Salt
Pepper
Optional: Coconut Aminos
Chop bacon/chicken into ½” pieces. Once cooked through, pull out meat and set aside. Scramble eggs. Pull scrambled eggs out and set aside. Add oil to the pan along with chopped veggies and garlic. Sauté for 5-7 minutes. Add cauliflower rice and cover for 10 minutes. Add bacon, shredded chicken (I just use leftover chicken but canned is another option), and eggs together in the pan, season with Coconut Aminos, salt and pepper to your liking.
Since this meal obtains plenty of vegetables, protein, and fats, I typically serve this alone. If looking for something to serve along side it, simply look at adding a seasonal fruit.
