Hearty Chicken Enchilada Soup

It's almost soup weather here and I can hardly wait!!! I didn't realize how much I missed having soup until recently when we had a couple days of cooler weather and I was all of the sudden craving it!
Soup is great for multiple reasons, but my favorite reasons are it warms you from the inside out AND it's excellent to make a bunch and freeze some for later!
This enchilada soup recipe is dairy free and can easily be made grain free (omit the corn). Perfect for just about everyone!
Hearty Chicken Enchilada Soup

2 Tbls olive oil
1 medium onion, diced
4 cloves garlic, minced
1 Tbls parsley
2 tsp dill
1 tsp paprika
2 tsp cumin
salt
pepper
1 lb chicken breast
4-6 cups bone broth or water
1 can black beans
1 can organic refried beans
2 cups organic sweet corn (I used frozen)
1 cup organic green enchilada sauce
1/2 c cilantro, minced
Toppings: lime, avocado, organic tortilla chips, fresh cilantro, plain greek yogurt
Stovetop Directions
Using a medium large sauce pan, turn pot on medium high heat, add oil, onion, garlic, parsley, dill, paprika, cumin. Sauté until onions are translucent and garlic fragrant. Add remaining ingredients and bring to a simmer. Cover and simmer for 20 minutes. Pull the chicken out and shred it using two forks before adding back in.
Instant Pot Directions
Turn instant pot on sauté, add oil, onion, garlic, parsley, dill, paprika, cumin. Sauté until onions are translucent and garlic fragrant. Add remaining ingredients and set instant pot on high pressure for 20 minutes. Allow to natural release before pulling the chicken out and shredding it using two forks before adding back in.
Serve with your favorite toppings: sour cream, greek yogurt, avocados, lime, cilantro, organic tortilla chips
Today's nutrition tip is going to be a super simple one and it's one that most of us might be a little surprised over. I want to explain why bone broth might not be the best ingredient to include in our soups sometimes.
I used to be 100% committed to bone broth. Like, it was showing up in soups, rice, steamed veggies, gravies, you name it! I always had a jar of it in my fridge and even more in my freezer...until I learned about it's high histamine levels. (What???!)
Histamine, is essentially a response your body puts off to protect it from getting sick. In some cases, when you have too much histamine in your body you start to show symptoms of rashes, allergy-like symptoms, asthma, and HIVES! If you know anything about my story then you know that I've been dealing with chronic hives for the past 3 years. All. Over. MY BODY!!! So once I learned that bone broth tends to set off a histamine response I decided to give it a try and cut it out (among other things as well). Since then, I've just learned to cook my soups with good ol' purified water and seasonings. It's been great, and I haven't honestly really missed it.
So if you're one that may be dealing with high histamine levels, this could be a simple swap to make in your kitchen. Does this mean I'm anti-bone broth? No, I still love it and all the wonderful qualities it posses, BUT I do know, from personal experience, that there's a time and a place for either removing or adding foods into your diet. Right now, for me, bone broth is taking a back seat until I can get even more control over my bodies health.
