No Sweat Baked Sweet Potatoes

Everyone loves a good baked potato every now and then, but have you tried a baked SWEET potato?! They are just as versatile as baked potatoes but with more flavor AND nutrients!!!


When I started eating gluten free 2 years ago I started looking for ways to spice up my meals that typically included a bun, noodles, or tortillas.


Presenting...sweet potatoes!!!!


I have poured marinara sauce over top sweet potatoes, put them in a burrito bowl, served BBQ pork or Sloppy Joe "filling" on top, and even used leftover sweet potatoes in breakfast hashes and scrambles! I'm telling you, having baked sweet potatoes on hand can help so much with curbing your grain cravings but also add some yummy sweetness to your dishes, ESPECIALLY when entering the gluten free world.


No Sweat Baked Sweet Potatoes

4 large sweet potatoes, halved

Parchment paper

Cookie sheet


Preheat your oven to 450 degrees Fahrenheit. Cover your cookie sheet with parchment paper. Cut your sweet potatoes in half, length wise. Place them face down on top of the parchment covered cookie sheet. Bake in the oven for 30 minutes or until potatoes are soft to the touch, they may take a little longer if potatoes are thicker. (Test doneness with a fork.)

Serve as a side or as the main course carb.


As you can already tell by my above suggestions, sweet potatoes are very versatile and can be used to swap out a lot of dishes that contain gluten products. I love sweet potatoes because they are lower on the glycemic index, which means they don't effect our blood sugar levels like white potatoes or even as much as grains do. Sweet potatoes also include vitamins A and C which are important vitamins that help boost and support the bodies immune system.


Sweet potatoes are also an excellent source of copper, a blood building and blood circulation mineral, manganese, a nutrient absorption mineral, and potassium, an electrolyte mineral that helps balance out fluids in the body and facilitates muscle contraction.


For as easy as they are to prepare, sweet potatoes are certainly worth having in your kitchen on a regular basis.
